Yummy....!

Try this for a zingy summer starter....

Mix
Zest and juice of 1 lime
1 Tbl spoon of capers
1 Tbl spoon of white wine vinegar
2 cloves garlic finely chopped
1 Teaspoon of grain mustard
Handful of coriander leaves
2 Tbl spoons of olive oil
Salt and Pepper

Then heat a pan of oil, dust slices of Haloumi cheese in seasoned flour and pan fry for about a minute each side or until golden brown. Serve, spoon over the mix and dress with a little more coriander....Enjoy with a cold Pinot....!
